Baked Turkey & Quinoa Meatballs

Yield:
  • Makes 30
Ingredients

1.5 pounds turkey (or chicken breast or lean ground beef)

1 cup cooked quinoa (try a frozen one that cooks in the microwave for three minutes.)

1 egg

2 tsp garlic powder

1 tsp oregano

1 tsp salt

1 tsp pepper

Steps
  1. Preheat oven and two cookie sheets to 400 degrees.
  2. Combine ingredients in a large bowl and mix with your hands.
  3. Take pans out of the oven, spray with olive oil and, using a cookie scoop, scoop golf ball-sized balls onto the pans.
  4. Bake 15 minutes, flip meatballs and bake another 5 minutes.
  5. Serve with pasta/zucchini pasta and your favorite sauce.
